Pinakbet Filipino Vegetable Stew
A flavorful and classic Filipino vegetable stew originating from the Ilocos region. This hearty dish is made with a variety of vegetables and a savory bagoong sauce.
Ingredients
- β1 pound pork belly or baby back ribsyou can also use pork shoulders
- β2 tablespoons bagoong (fermented fish sauce)adjust to taste
- β2 tablespoons vegetable oil
- β1 medium onion, chopped
- β3 cloves garlic, minced
- β1 large eggplant, cut into wedges
- β1 cup okra, sliced
- β2 long green chili peppers
- β2 medium tomatoes, chopped
- β1 cup spinachfresh or frozen

Heat the vegetable oil in a large pan over medium heat.

Add the pork belly or baby back ribs and cook until browned on all sides.

Add the bagoong sauce and stir well.

Add the eggplant, okra, long green chili peppers, and tomatoes. Stir well.
