Filipino Sweet Rice Pudding
A classic Filipino dessert made with sweet rice, milk, and a touch of sweetness. This creamy pudding is perfect for hot summer days or as a comforting treat.
Ingredients
- β1 cup Sweet Ricepreferably short-grain rice
- β2 cups Coconut Milkfull-fat can
- β1/2 cup Sugaror to taste
- β1/4 teaspoon Salt
- β1 teaspoon Vanilla Extract
- βoptional Pandan Leavesfor extra flavor and color

Rinse the sweet rice thoroughly and soak it in water for at least 4 hours or overnight.

Drain the water and cook the sweet rice in a medium saucepan with 2 cups of water over medium heat.

Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the liquid has been absorbed and the rice is tender.

In a separate saucepan, combine the coconut milk, sugar, and salt. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved.

Add the cooked sweet rice to the coconut milk mixture and stir to combine.

Cook for an additional 5-7 minutes, or until the pudding has thickened slightly.

Remove the saucepan from the heat and stir in the vanilla extract.

If using pandan leaves, add them to the pudding and let it steep for at least 30 minutes to allow the leaves to infuse their flavor and aroma.
