Cochinita Pibil
A traditional Mexican dish from the Yucatan region, cochinita pibil is a slow-roasted pork marinated in citrus juice, spices, and chili peppers. The pork is then wrapped in banana leaves and cooked to perfection.
Ingredients
- β2 lbs Pork shoulderAsk for the pork shoulder to be tied with kitchen twine
- β1/4 cup Orange juice
- β1/4 cup Lime juice
- β2 tbsp Chili powder
- β1 tsp Cumin
- β4 cloves Garlic
- β4-6 leaves Banana leavesFresh or frozen banana leaves
- β1 tsp Salt
Instructions

In a blender or food processor, combine orange and lime juice, chili powder, cumin, garlic, and salt. Blend until smooth.

Place the pork shoulder in a large ziplock bag or a non-reactive container. Pour the marinade over the pork and massage to coat.

Refrigerate for at least 2 hours or overnight.

Preheat the oven to 300Β°F (150Β°C).

Remove the pork from the marinade, letting any excess liquid drip off.

Place the pork on a large piece of aluminum foil or parchment paper, leaving a 1-inch border around the pork.

Place 2-3 banana leaves on top of the pork, overlapping them slightly to cover the entire surface.

Fold the foil or parchment paper over the pork and banana leaves, creating a tight seal.

Place the pork in the preheated oven and cook for 2-1/2 to 3 hours, or until the pork is tender and easily shreds with a fork.

Remove the pork from the oven and let rest for 10-15 minutes before slicing.
