Argentinian Skillet Pork
A deliciously tangy pork dish from Argentina, cooked to perfection in a skillet.
Ingredients
- β1 pound pork tenderloinpreferably boneless
- β1 medium red onionthinly sliced
- β1 medium red bell pepperthinly sliced
- β2 teaspoons jerk seasoningstore-bought or homemade
- β2 tablespoons olive oilfor cooking
- β2 tablespoons lemon juicefreshly squeezed
- β2 cloves garlicminced
- βto taste saltpreferably sea salt
- βto taste black pepperpreferably freshly ground

Heat a large skillet over medium-high heat.

Season the pork tenderloin with jerk seasoning, salt, and black pepper.

Add 1 tablespoon of olive oil to the skillet and sear the pork for 2-3 minutes on each side.

Remove the pork from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the skillet.

Add the thinly sliced red onion and red bell pepper to the skillet.

Cook the vegetables for 3-4 minutes or until they start to soften.

Add the minced garlic to the skillet and cook for an additional minute.

Return the pork to the skillet and pour in the lemon juice.

Cook for an additional 2-3 minutes or until the pork reaches an internal temperature of 145Β°F (63Β°C).
