Alicha Chicken with Kik Spices
A flavorful and aromatic Ethiopian dish made with marinated chicken, served with a side of sautéed kik spices and a sprinkle of cilantro.
Ingredients
- ●1 1/2 pounds chicken breastsboneless and skinless
- ●2 tablespoons kik spice blendavailable at most Ethiopian markets or online
- ●2 inches gingerfresh and sliced
- ●3 cloves garlicminced
- ●2 tablespoons olive oilfor cooking
- ●1 small onionchopped
- ●1/4 cup cilantrochopped for garnish

1. In a large bowl, whisk together kik spice blend, garlic, and olive oil to make a marinade.

2. Add the chicken breasts to the marinade and mix well to coat. Cover and refrigerate for at least 2 hours or overnight.

3. Preheat the oven to 400°F (200°C).

4. Remove the chicken from the marinade and place on a baking sheet lined with parchment paper.

5. Bake the chicken for 25-30 minutes or until cooked through.

6. While the chicken is baking, heat a large skillet over medium-high heat.

7. Add the chopped onion and cook for 3-4 minutes or until softened.

8. Add the sliced ginger and cook for an additional minute.

9. Once the chicken is cooked, let it rest for 5 minutes before slicing.

10. Serve the sliced chicken with the sautéed onion and ginger mixture spooned over the top.
