Brazilian-Style Rice Bake
A flavorful and simple rice dish with a twist of Brazilian spices. This recipe is perfect for a weeknight dinner or a lunch meal.
Ingredients

- ●1 tsp brazilian-style seasoningor to taste
- ●1 tsp dried oreganooptional
- ●1 medium bakesweet potato, peeled and diced
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●1 cup diced tomatoescanned or fresh
- ●1/2 cup shredded cheeseoptional

1. Preheat oven to 350°F (175°C).

2. In a large bowl, mix together rice, brazilian-style seasoning, and dried oregano (if using).

3. In a separate pan, sauté the onion, garlic, and sweet potato until tender.

4. Add the diced tomatoes to the pan and cook for an additional 2-3 minutes.

5. In a 9x13 inch baking dish, create a layer of rice mixture, followed by a layer of the vegetable mixture.

6. Repeat steps 5 for 2-3 layers, ending with a layer of rice on top.

7. If using cheese, sprinkle on top of the final layer of rice.

8. Bake in the preheated oven for 25-30 minutes, or until the rice is tender and the top is lightly browned.
