Peruvian Lomo Saltado
A traditional Peruvian stir-fry dish made with tender beef strips, onions, tomatoes, and French fries, served with rice.
Ingredients
- β1 pound thinly sliced beef (lomo)
- β1 large onion
- β2 medium tomato
- β1 cup French fries
- β2 tablespoons soy sauce
- β1 teaspoon Aji amarillo pepper
- β1 clove garlic
- βto taste salt and pepper
- β2 cups cooked rice
- βchopped scallions
Instructions

Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.

Add the beef and cook until browned, about 3-4 minutes. Remove from the wok and set aside.

Add the remaining 1 tablespoon of oil to the wok and cook the onion until softened, about 2-3 minutes.

Add the tomato and cook for an additional 2 minutes.

Add the French fries, soy sauce, Aji amarillo pepper, and garlic to the wok. Stir-fry for 2-3 minutes.

Return the beef to the wok and stir-fry for an additional 2-3 minutes.

Season with salt and pepper to taste.

Serve the beef and vegetable mixture over cooked rice.

Garnish with chopped scallions and serve immediately.
