Peruvian Cheese Tagine
A rich and flavorful Peruvian-inspired stew made with tender cheese and aromatic spices.
Ingredients
- β1 block (8 oz) Peruvian cheesesuch as Queso fresco or similar
- β2 tsp Tagine spice blendor substitute with a mix of cumin, coriander, and cinnamon
- β2 large Dense sweet potatoessuch as Yukon gold or similar
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 tbsp Olive oilfor cooking
- β2 cups Waterfor cooking
Instructions

1. Heat oil in a large Dutch oven over medium heat.

2. Add onion and cook until softened, about 5 minutes.

3. Add garlic and cook for 1 minute.

4. Add sweet potatoes and cook for 5 minutes, stirring occasionally.

5. Stir in Tagine spice blend and cook for 1 minute.

6. Add Peruvian cheese and water, bring to a simmer.

7. Reduce heat to low and cook, covered, until cheese is melted and sweet potatoes are tender, about 20-25 minutes.

8. Season with salt and pepper to taste.
