Greek Shrimp Fritters with Avgolemono Sauce
A delightful Greek-inspired appetizer or snack combining shrimp and avgolemono sauce with crispy fritters.
Ingredients
- β1 pound 1 pound large shrimp, peeled and deveinedraw, deveined
- β1 cup 1 cup all-purpose flourdry
- β2 tablespoons 2 tablespoons chopped fresh dillfresh
- β1/4 cup 1/4 cup grated Parmesan cheesedry
- β1/4 cup 1/4 cup dry white winedry
- β1 egg 1 eggraw
- β2 tablespoons 2 tablespoons avgolemono sauceavgolemono sauce (store-bought or homemade)
- β1/2 cup 1/2 cup vegetable oilfor frying

In a large bowl, mix together the shrimp, flour, dill, Parmesan cheese, and white wine.

In a separate bowl, whisk together the egg and avgolemono sauce.

Add the egg mixture to the shrimp mixture and mix until well combined.

Using your hands, shape the mixture into small fritters.

Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.

When the oil is hot, add a few fritters to the skillet and fry until golden brown, about 2-3 minutes on each side.

Repeat with the remaining fritters.

Drain the fritters on paper towels and serve hot with additional avgolemono sauce for dipping.
