Avocado Sambhar
A creamy and flavorful take on traditional Indian sambhar, incorporating ripe avocado for added richness.
Ingredients
- β2 tablespoons Sambhar powder
- β1 ripe AvocadoDiced
- β1 medium OnionChopped
- β1 medium CarrotChopped
- β1 cup Tomato puree
- β1 cup Mixed vegetables (such as bean sprouts, peas, and cauliflower)
- β2 cups WaterAdjust to desired consistency
- β1 cup Rice for serving (optional)
- β1 tablespoon Ghee or oil for serving (optional)

Heat 1 tablespoon of oil in a large pan over medium heat.

Add the chopped onion and cook until softened.

Add the chopped carrot and cook for 2-3 minutes.

Add the mixed vegetables and cook for 2-3 minutes.

Add the sambhar powder and cook for 1 minute.

Add the tomato puree and water, and stir well.

Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes.

Stir in the diced avocado and cook for an additional 2-3 minutes.

Serve the sambhar over rice, if desired, and garnish with a dollop of ghee or oil, if desired.
