Kanten Tacos
A vegetarian twist on traditional tacos, using kanten to create a meat-free substitute.

Ingredients
- β1 block (200g) kantendissolved in 1 cup (250ml) water
- β2 cups (400g) diced tomatoes
- β1 tsp cumin
- β1 tsp chili powder
- β1/2 tsp salt
- β8-10 tortillas
- β1 cup (20g) shredded lettuce
- β1 cup (150g) diced avocado
- β1/2 cup (120g) sour cream (vegan)
- β1 cup (250g) salsa

1. Dissolve the kanten in water and bring to a boil. Reduce heat and simmer for 10 minutes.

2. Add diced tomatoes, cumin, chili powder, and salt to the kanten mixture. Simmer for an additional 10 minutes.

3. Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
