Traditional Polish Pork Stew
A hearty, comforting stew made with tender pork and a blend of traditional polish spices.
Ingredients
- β1 pound pork shouldercut into 1-inch cubes
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 stalks celerychopped
- β2 tablespoons all-purpose flourfor coating pork
- β2 cups beef brothhomemade or store-bought
- β1 pound polish sausagecut into 1-inch slices
- β1 teaspoon dried thymeor to taste
- β1 teaspoon saltor to taste
- β1/2 teaspoon black pepperor to taste

Heat oil in a large Dutch oven over medium-high heat.

Add the pork and cook until browned on all sides, about 5 minutes.

Remove the pork from the pot and set aside.

Add the onion, carrot, and celery to the pot and cook until the vegetables are tender, about 5 minutes.

Add the flour to the pot and cook for 1 minute.

Gradually add the broth to the pot, whisking constantly.

Return the pork to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, for 2 hours.

Add the sausage to the pot and cook for an additional 30 minutes.
