Borscht with San Marzano Tomato
A classic Ukrainian beet soup with a twist, using San Marzano tomatoes for added flavor.

- β2 large Beets
- β1 medium Onion
- β2 medium Carrots
- β2 cups San Marzano Tomatocanned
- β2 cups Ukrainian Borschtcanned
- β4 cups Vegetable broth
- βchopped fresh Dill

Instructions

Heat oil in a large pot over medium heat.

Add onion and cook until softened, about 5 minutes.

Add carrots and cook for another 5 minutes.

Add beets, borscht, and vegetable broth. Bring to a boil.

Reduce heat and simmer for 30 minutes.
