Smoked Haddock Croquettes
A French-inspired dish featuring smoked haddock, pilaf, and a crispy exterior. Perfect as a snack or appetizer.

- β1 pound smoked haddockflaked
- β1 cup all-purpose flourfor coating
- β2 eggsbeaten
- β1/2 cup grated croatian cheeseoptional
- β1/4 cup butter, meltedfor frying
- β2 lemon wedgesfor serving

In a large bowl, combine the pilaf, smoked haddock, and grated croatian cheese (if using).

Mix well to combine.

In a separate bowl, beat the eggs.

Add the flour to the egg mixture and mix until a smooth batter forms.

Add the egg batter to the pilaf mixture and mix until just combined.

Using your hands, shape the mixture into small patties.

Dip each patty into the melted butter, coating both sides evenly.

Heat about 1/2 inch of melted butter in a large skillet over medium-high heat.
