Smoky Thai Larb
A spicy, sour, and sweet take on the classic Thai dish, with a smoky twist from the use of chipotle peppers.
Ingredients
- β1 pound Ground Meat
- β2 peppers Chipotle Peppers in Adobo Sauce
- β1/4 cup Fresh Cilantro
- β2 tablespoons Palm Sugar
- β2 tablespoons Fish Sauce
- β2 tablespoons Lime Juice
- β1 tablespoon Rice Vinegar
- β2 peppers Thai Red Chili Peppers
- β3 cloves Garlic
- β1/4 cup Mint Leaves

1. In a blender or food processor, combine chipotle peppers, garlic, and 1 tablespoon of fish sauce. Blend until smooth.

2. In a large pan or wok, heat 2 tablespoons of oil over medium-high heat.

3. Add the blended chipotle mixture to the pan and cook for 1 minute.

4. Add the ground meat to the pan and cook until browned, breaking it up with a spoon as it cooks.

5. Add the palm sugar, fish sauce, lime juice, and rice vinegar to the pan and stir to combine.

6. Add the Thai red chili peppers to the pan and cook for an additional 2 minutes.

7. Stir in the fresh cilantro and mint leaves.

8. Taste and adjust the seasoning as needed.

9. Serve the larb hot, garnished with additional cilantro and lime wedges if desired.
