Ethiopian Doro Jjigae
A spicy and flavorful Ethiopian chicken stew made with tender pieces of chicken in a rich, smoky sauce. This dish is a fusion of traditional Ethiopian and Korean flavors.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β2 stalks lemongrasschopped
- β2 tablespoons doro spice blendstore-bought or homemade
- β1 teaspoon ethiopian red pepperground
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato pasteoptional
- β2 cups chicken brothlow-sodium
- β1 teaspoon smoked paprikaoptional
- βto taste salt
- βto taste black pepper
Instructions

Heat oil in a large pan over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Add the lemongrass, doro spice blend, ethiopian red pepper, onion, and garlic. Cook for 1 minute.

Add the tomato paste (if using) and cook for 1 minute.

Add the chicken broth and smoked paprika (if using). Bring to a boil, then reduce the heat to low and simmer for 20 minutes.

Season with salt and black pepper to taste.

Serve hot, garnished with chopped fresh cilantro (optional).
