Ukrainian Vegetable Pilaf
A hearty, vegetarian Ukrainian pilaf dish filled with vegetables and spices. Serve hot as a side or main course.

Ingredients
- β1 cup Pilaf rice
- β1 cup Diced carrots
- β1 cup Diced bell peppers
- β1/2 cup Diced onion
- β1/4 cup Chopped fresh parsley
- βto taste Salt and pepper
- β2 tbsp Vegetable oil
- β1 tsp Dried dill weed
- β1/4 tsp Freshly ground black pepper

Instructions

Heat oil in a large skillet over medium heat.

Add diced onion and cook until softened, about 5 minutes.

Add diced carrots and bell peppers, cook for an additional 5 minutes.

Stir in pilaf rice, dried dill weed, salt and pepper.

Add 2 cups of water to the skillet and bring to a boil.

Reduce heat to low, cover and simmer for 20 minutes.

Stir in chopped parsley, serve hot.
