Thai Tandoori Soup
A flavorful and spicy Thai-inspired soup featuring tandoori chicken and a variety of vegetables.
Ingredients
- β1 pound chicken breastboneless and skinless
- β2 cups coconut milkfull-fat
- β2 tablespoons vegetable oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tablespoon gingergrated
- β2 tablespoons tandoori spice blend
- β1/4 cup dillchopped

Heat the oil in a large pot over medium-high heat.

Add the onion and cook until softened, about 3-4 minutes.

Add the garlic and ginger and cook for an additional minute.

Add the chicken and cook until browned on all sides, about 5-6 minutes.

Add the tandoori spice blend and cook for 1 minute.

Pour in the coconut milk and bring the mixture to a simmer.
