Smoky Tomato Carbonara
A twist on the classic Italian dish, with smoky bacon and fresh tomatoes.
Ingredients
- β6 slices smoky baconCooked and crumbled
- β2 plum tomatoesChopped
- β1 cup italian cheeseShredded
- β12 oz carbonara pastaCooked al dente
- β1/4 cup fresh basilChopped
- β2 cloves garlicMinced
- β2 tbsp olive oilFor cooking
- βto taste salt
- βto taste black pepper
Instructions

Bring a large pot of salted water to a boil and cook the carbonara pasta according to package instructions.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute.

Add the chopped plum tomatoes to the skillet and cook for 2-3 minutes, until they start to release their juices.

Add the crumbled smoky bacon to the skillet and cook for an additional 2-3 minutes, until heated through.

In a large serving bowl, combine the cooked pasta, bacon and tomato mixture, and shredded italian cheese.

Season with salt and black pepper to taste.

Garnish with chopped fresh basil and serve immediately.
