Croatian Mushroom Skewers with Binchotan Glaze
A flavorful and aromatic dish featuring Croatian mushrooms, marinated in a mixture of herbs and spices, then grilled to perfection and served with a sweet binchotan glaze.
Ingredients
- β250g Croatian mushroomssuch as porcini or chanterelle
- β binchotan charcoalfor grilling
- β2 tbsp olive oilfor marinating
- β1 tbsp lemon juicefor marinating
- β2 cloves garlicminced
- β1 tsp thymedried
- βto taste salt
- βto taste black pepper

Preheat the grill to medium-high heat.

In a large bowl, whisk together olive oil, lemon juice, garlic, thyme, salt, and pepper.

Add the mushrooms to the bowl and toss to coat with the marinade.

Thread the mushrooms onto skewers, leaving a small space between each mushroom.

Brush the grill grates with binchotan charcoal to prevent sticking.

Grill the skewers for 3-4 minutes per side, or until the mushrooms are tender and slightly charred.

Meanwhile, mix together 1 tbsp of water and 1 tsp of binchotan charcoal to create a glaze.

Brush the glaze over the skewers during the last minute of grilling.
