Japanese Beef Bowl
A flavorful and easy-to-make beef bowl inspired by Japanese cuisine, with marinated beef short ribs and sautéed vegetables.
Ingredients
- ●1 pound beef short ribspreferably with some marbling for flavor
- ●2 tablespoons soy sauce
- ●1 tablespoon sugar
- ●2 tablespoons rice vinegar
- ●1 teaspoon sesame oil
- ●1/4 cup green onions
- ●1/4 cup thinly sliced daikon
- ●1 cup sliced mushrooms

In a large bowl, whisk together soy sauce, sugar, rice vinegar, and sesame oil for the marinade.

Add the beef short ribs to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Preheat a large skillet or wok over medium-high heat.

Add 1 tablespoon of oil to the skillet and sear the beef short ribs until browned on all sides, about 2-3 minutes per side.

Transfer the beef to a plate and set aside.

In the same skillet, add another tablespoon of oil and sauté the green onions, daikon, and mushrooms until they are tender-crisp.

Return the beef to the skillet and add salt and black pepper to taste. Simmer for 5 minutes to allow the flavors to meld.

Serve the beef and vegetables over a bed of steamed rice, garnished with additional green onions if desired.

Cook the beef to an internal temperature of 135°F (57°C) for medium-rare, as it will continue to cook a bit after it's removed from the heat.

Let the beef rest for 5 minutes before slicing it thinly against the grain.

Cook the vegetables for 3-5 minutes, or until they are tender-crisp and lightly browned.
