Venezuelan-Style Smoked Cod Ceviche
A light and refreshing Mexican-inspired dish made with smoked cod, marinated in a zesty mixture of lime juice and spices.
Ingredients
- ●6 oz Smoked CodThawed and flaked
- ●1/4 cup Fresh Lime Juice
- ●1/4 cup Red OnionThinly sliced
- ●1/4 cup CilantroChopped
- ●1/4 cup Diced Tomatoes
- ●1/4 cup Diced JalapeñoSeeded and chopped
- ●to taste Salt
- ●to taste Black Pepper
- ●6-8 Dusted (tortilla chips or tostadas)

Rinse the cod under cold water and pat dry with paper towels.

In a large bowl, combine the lime juice, red onion, cilantro, diced tomatoes, and diced jalapeño.

Add the cod to the marinade and mix well to coat.

Season with salt and black pepper to taste.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

Just before serving, crush the dusted tortilla chips or tostadas to create crumbs.

Spoon the ceviche mixture onto the crushed tortillas or tostadas.
