Zanzibari Chicken Pilaf
A flavorful and aromatic dish from the coast of East Africa, featuring chicken cooked in a zanzibari spice blend and served over a warm pilaf.
Ingredients
- β1 pound chicken breast
- β2 tablespoons zanzibari spice blend
- β1 cup dwholesome basmati rice
- β1 teaspoon pilaf seasoning
- β2 tablespoons olive oil
- β1 medium onion
- β2 cloves garlic
- βto taste salt
- βto taste pepper
Instructions

Heat the olive oil in a large skillet over medium-high heat.

Add the onion and garlic and cook until the onion is translucent.

Add the chicken and cook until browned on all sides.

Add the zanzibari spice blend and cook for 1 minute.

Add the pilaf seasoning and stir to combine.

Add the basmati rice and stir to combine.

Add 2 cups of water and bring to a boil.
