Massaman Curry with Earthy Notes

- β2 tablespoons Massaman curry paste
- β2 tablespoons Coconut oil
- β1 medium, chopped Onion
- β1 cup, sliced Mushroom
- β1 cup, chopped Thai basil
- β1 tablespoon Fish sauce (optional)Omit for vegan version
- β1 tablespoon Palm sugar
- β1 cup Coconut milk
- β2 cups Water
- βto taste Salt

Instructions

Heat oil in a large saucepan over medium heat.

Add onion and cook until softened, 3-4 minutes.

Add coconut milk, water, fish sauce (if using), and palm sugar.
