Thai-Style Lentil Stew
A hearty and flavorful Thai-inspired stew made with lentils, earthly spices, and a hint of algerian flair.
Ingredients
- β1 cup lentilsany color
- β2 tsp earthly spice blendavailable at most Asian markets
- β1 tsp algerian cuminoptional, but recommended for authentic flavor
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 medium red bell pepperdiced
- β1 can coconut milkfull-fat
- β2 cups vegetable brothlow-sodium
- βto taste saltoptional
- βto taste pepperoptional
Instructions

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the onion, garlic, and red bell pepper; cook until the vegetables are tender, about 5 minutes.

Add the lentils, vegetable broth, coconut milk, earthly spice blend, algerian cumin, salt, and pepper.

Bring the stew to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.

Serve the stew hot, garnished with chopped fresh cilantro or scallions, if desired.

Note: You can also make this stew in a slow cooker; simply brown the onion and garlic in a pan, then transfer everything to the slow cooker and cook on low for 6-8 hours.
