Earthy Corn Tacos
A flavorful twist on traditional tacos, featuring earthy mushrooms, baked corn, and a hint of greek yogurt.
Ingredients
- β1 cup sliced MushroomsEarthy variety such as cremini or shiitake
- β1 cup kernels CornFresh or frozen, thawed
- β1/4 cup Greek yogurt
- β6-8 Tacos shells
- β2 tablespoons Olive oil
- β1 teaspoon Cumin
- β1/2 teaspoon Chili powder
- βto taste Salt
- βto taste Pepper

1. Preheat oven to 400Β°F (200Β°C).

2. In a bowl, toss corn kernels with 1 tablespoon olive oil, cumin, and chili powder. Spread on a baking sheet and bake for 15-20 minutes, or until lightly toasted.

3. In a separate pan, heat the remaining 1 tablespoon olive oil over medium heat. Add sliced mushrooms and cook until tender, about 5-7 minutes.
