Filipino-Style Stew with Peanuts
A hearty and flavorful stew from the Philippines, featuring peanuts for added crunch.
Ingredients

- β1 cup chewy seitancut into bite-sized pieces
- β1 cup stew vegetablessuch as carrots, potatoes, and green beans

- β1 cup coconut milkoptional
- β4 cups vegetable brothhomemade or store-bought

Heat oil in a large pot over medium heat.

Add the chopped peanuts and cook until lightly toasted, about 5 minutes.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the seitan and cook until it's lightly browned, about 5 minutes.

Add the stew vegetables, soy sauce, fish sauce, and coconut milk (if using). Stir to combine.

Pour in the vegetable broth and bring the stew to a boil.
