Grilled Anticuchos-Style Tofu with Earthy Chimichurri
A vegan twist on classic Peruvian anticuchos, featuring marinated tofu grilled to perfection and served with a zesty, earthy chimichurri sauce.
Ingredients
- β1 block (14 oz) tofu
- β2 tbsp soy sauce
- β1 tbsp lime juice
- β1 tsp peruvian aji amarillo pepper
- β1 tsp oregano
- β1 clove garlic
- β1/4 cup parsley
- β1/4 cup olive oil
- β1/4 cup red onion
- β1/4 cup chimichurri saucesee below for homemade chimichurri sauce recipe

1. Preheat grill to medium-high heat.

2. Cut tofu into skewer-sized pieces.

3. In a shallow dish, whisk together soy sauce, lime juice, aji amarillo pepper, oregano, garlic, and parsley.

4. Add tofu pieces to the marinade and toss to coat.

5. Let tofu marinate for at least 30 minutes.

6. Grill tofu for 2-3 minutes per side, or until golden brown.
