Scamorza and Revithia Fritters
A Greek-inspired snack or appetizer featuring crispy fritters filled with the creamy taste of scamorza cheese and earthy lentils.
Ingredients
- β1 cup revithia (lentils)
- β8 oz scamorza cheese
- β1 1/2 cups all-purpose flour
- β2 large eggs
- β1 tsp salt
- β1/2 tsp black pepper
- β1/2 cup olive oil

In a medium bowl, whisk together the flour, eggs, salt, and black pepper.

Add the revithia to the bowl and mix until well combined.

Add the scamorza cheese to the bowl and mix until well combined.

Using your hands, shape the mixture into small patties or balls.

Heat the olive oil in a large skillet over medium-high heat.

When the oil is hot, add a few of the fritters to the skillet (do not overcrowd).

Fry the fritters until they are crispy and golden brown on both sides, about 3-4 minutes per side.

Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve the fritters warm, garnished with chopped fresh parsley or oregano if desired.
