Hearty Kenyan Stew
A flavorful and comforting stew originating from Kenya, featuring earthy spices and tender beef.
Ingredients
- β1 pound beef stew meatcut into 1-inch cubes
- β2 medium carrotspeeled and chopped
- β2 stalks celerychopped
- β1 medium onionchopped
- β2 tablespoons earthly spice blendavailable at most African or international markets
- β2 tablespoons tomato pasteoptional
- β4 cups stew brothhomemade or store-bought
- β salt and pepperto taste

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Add the chopped onion, carrots, and celery to the pot and cook until the vegetables are tender, about 5 minutes.

Add the earthly spice blend and cook for 1 minute.

Add the tomato paste, if using, and cook for 1 minute.

Add the stew broth and bring to a boil.

Return the beef to the pot and bring the stew to a simmer.
