Thai Beef Stew
A hearty Thai-inspired beef stew with rich and savory flavors. Perfect for a cold evening!
Ingredients
- β1 pound beefsirloin or ribeye
- β2 tablespoons earthground ginger
- β2 tablespoons uruguayanachiote paste
- β2 cups stewbeef broth
- β1 cup coconut milkfull-fat
- β2 tablespoons fish sauceoptional
- β2 tablespoons brown sugaroptional
- β2 cups ricecooked white rice
- β4 scallionsthinly sliced
- β2 chili peppersthinly sliced

Heat oil in a large Dutch oven over medium-high heat. Add the sliced chili peppers and cook until fragrant, about 1 minute.

Add the beef and cook until browned, about 3-4 minutes.

Add the achiote paste and cook for 1 minute, until fragrant.

Add the beef broth, coconut milk, fish sauce, and brown sugar. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 1 1/2 hours, or until the beef is tender.

Season the stew with salt and pepper to taste.

Serve the stew over cooked white rice, garnished with thinly sliced scallions.
