Vietnamese Beef Kho

- β1 pound beef short ribscut into 2-inch pieces
- β2 cups earthly mushroomssliced
- β2 tablespoons kho bo saucestore-bought or homemade
- β1 tablespoon fish sauceoptional
- β1 tablespoon sugaroptional
- β2 medium eggplantcut into 1-inch pieces
- β1 cup coconut milkcanned
- β2 cups wateror beef broth
- β1 teaspoon saltoptional
- β1/2 teaspoon black pepperoptional

Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes. Remove from pot.

Add more oil if necessary, then add mushrooms and cook until browned, about 5 minutes.

Add kho bo sauce, fish sauce, sugar, eggplant, coconut milk, water, salt, and pepper.

Return beef to pot and bring to a boil.

Reduce heat to low and simmer, covered, until beef is tender, about 2 hours.
