Indian-Style Stuffed Paneer
A flavorful and nutritious dish featuring paneer stuffed with a blend of spices, herbs, and eggplantlicious curry.
Ingredients

- ●1/4 cup eggplantlicious curryHomemade or store-bought
- ●1 medium onionChopped
- ●2 inches gingerGrated
- ●3 cloves garlicMinced
- ●1 tsp cumin powderGround
- ●1 tsp coriander powderGround
- ●1/2 tsp turmeric powderGround
- ●1/2 tsp red chili powderGround

Preheat the oven to 375°F (190°C).

Cut the paneer into small cubes and set aside.

In a pan, heat some oil over medium heat and sauté the onion, ginger, and garlic until the onion is translucent.

Add the cumin, coriander, turmeric, and red chili powder, and stir for 1 minute.

Stir in the eggplantlicious curry and cook for 2-3 minutes.

Add the paneer cubes and stir to coat with the spice mixture.
