Spanakopita Stuffed Leeks
A unique twist on traditional spanakopita, with tender leeks wrapped around a flavorful spinach and feta filling.
Ingredients
- β4 large leekwhite and light green parts only
- β1 package spanakopitathawed and crumbled
- β1/2 cup greek yogurtfor brushing leeks
- β1/4 cup feta cheesecrumbled
- β2 cloves garlicminced
- β1/2 tsp salt
- β1/4 tsp black pepper

Preheat oven to 375Β°F (190Β°C).

Trim the leeks, leaving the root end intact. Cut off the dark green tops and set aside.

Brush the leeks with Greek yogurt, then season with salt and black pepper.

Cut a horizontal slit in each leek, creating a pocket to fill.

Spoon the spanakopita mixture into each leek pocket.

Top each leek with crumbled feta cheese and a sprinkle of minced garlic.

Place the leeks on a baking sheet lined with parchment paper.
