Portuguese Chicken and Bisque
A classic Portuguese-inspired dish, combining succulent chicken with rich bisque for a flavorful and satisfying meal. The aromatic spices and herbs add a depth of flavor that will leave you wanting more.
Ingredients
- β4 chicken breasts
- β2 tablespoons olive oil
- β1 medium onion
- β3 cloves garlic
- β1 cup portuguese red wine
- β2 cups chicken broth
- β2 tablespoons tomato paste
- β2 medium tomatoes
- β1/2 teaspoon saffron threads
- βto taste salt
- βto taste black pepper
- β1 cup bisque
- βchopped parsley
Instructions

Season the chicken breasts with salt and black pepper.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Reduce heat to medium and add the onion to the skillet. Cook until softened, about 3-4 minutes.

Add the garlic to the skillet and cook for an additional minute.

Add the red wine to the skillet and cook, scraping up any browned bits, until reduced by half, about 2-3 minutes.

Add the chicken broth, tomato paste, and saffron threads to the skillet. Stir to combine.

Return the chicken to the skillet and simmer, covered, until cooked through, about 10-12 minutes.

Remove the chicken from the skillet and set aside.

Stir in the bisque and cook for an additional 2-3 minutes, or until heated through.

Serve the chicken with the bisque sauce spooned over the top. Garnish with chopped parsley.
