Brazilian Tofu Curry
A vibrant and flavorful Brazilian-inspired curry made with tofu, energizing spices, and rich coconut milk.
Ingredients
- β1 block (14 oz) tofufirm, drained, and cut into 1-inch cubes
- β2 tsp curry powderBrahm or Patak's recommended
- β1 can (14 oz) coconut milkfull-fat or low-fat, unsweetened
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tsp cuminground
- β1 tsp energizing spice blendor to taste (e.g., cayenne pepper, smoked paprika)
- β1/2 tsp saltor to taste
- β1/4 tsp black pepperor to taste
- βchopped (for garnish) fresh cilantro
Instructions

Heat 2 tbsp oil in a large skillet over medium-high heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the cumin and cook for 1 minute.

Add the tofu and cook until browned on all sides, about 5-7 minutes.

Add the curry powder, energizing spice blend, salt, and black pepper. Cook for 1 minute.

Stir in the coconut milk and bring to a simmer.

Reduce heat to low and cook for 5-7 minutes or until the sauce has thickened.
