Suspiro de Limeno Dessert
A Peruvian-inspired dessert made with rice pudding, charred lime, and a touch of energizing spices.
Ingredients
- β2 cups Rice
- β2 Lime
- β1 tsp Charred Lime Zest
- β1 tsp Energizing Spices (Cinnamon, Ginger)
- β1 cup Suspiro (Dulce de Leche)
- β1 cup Heavy Cream
- β1 cup Granulated Sugar
- β1/4 tsp Salt
- β2 tbsp Butter

Preheat the oven to 375Β°F (190Β°C).

Prepare the rice pudding by cooking the rice with heavy cream, sugar, and salt in a saucepan over medium heat, stirring occasionally.

Transfer the pudding to a baking dish and bake for 25-30 minutes, or until lightly golden brown.

While the pudding is baking, char the lime zest by holding it over an open flame, rotating it until it's lightly browned.

Remove the pudding from the oven and let it cool slightly.

In a separate saucepan, melt the butter over medium heat. Add the energizing spices and cook for 1-2 minutes, stirring constantly.

Stir the charred lime zest into the pudding and pour in the suspiro (dulce de leche).

Pour the pudding mixture into individual serving cups and top with a sprinkle of granulated sugar.

Chill the desserts in the refrigerator for at least 2 hours before serving.
