Australian Sausage-Free Pie
A vegan twist on the classic Australian sausage pie, made with savory lentil and mushroom filling.
Ingredients
- β250g Lentilscooked
- β200g Mushroomschopped
- β1 Onionchopped
- β2 Carrotschopped
- β2 tbsp Australian Bush Tomato pasteor tomato paste
- β1 Vegan pie crusthomemade or store-bought
- β2 tbsp Olive oil
Instructions

Preheat oven to 180Β°C (350Β°F).

Roll out the pie crust and place in a pie dish.

In a large pan, heat the olive oil over medium heat.

Add the chopped onion and cook until softened.

Add the chopped mushrooms and cook until they release their liquid and start to brown.

Add the cooked lentils, chopped carrots, and Australian Bush Tomato paste.

Season with salt and pepper to taste.

Pour the filling into the pie crust.

Cover with another pie crust or a crumbly topping, if desired.
