Kenyan Barramundi Stir Fry
A flavorful and healthy Kenyan-inspired dish made with barramundi, featuring a delicate balance of floral and silky notes.
Ingredients
- β4 barramundi filletsfrozen
- β2 tablespoons coconut oilfor frying
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β1 cup green beanstrimmed and chopped
- β2 inches gingergrated
- β2 tablespoons lemon juicefreshly squeezed
- β1 tablespoon honeyoptional
- β salt and pepperto taste

1. Heat the coconut oil in a large skillet over medium-high heat.

2. Add the onion and garlic and cook for 2-3 minutes, until softened.

3. Add the carrots and green beans and cook for 5 minutes, until tender.

4. Add the ginger and cook for 1 minute, until fragrant.

5. Add the barramundi fillets and cook for 3-4 minutes per side, until cooked through.

6. Remove the fish from the skillet and cover with foil to keep warm.

7. Add the lemon juice and honey (if using) to the skillet and stir to combine.
