Jamaican Rice Bowl
A flavorful and nutritious bowl filled with Jamaican spices, leeks, and energizing ingredients.
Ingredients
- β2 tsp Jamaican Jerk Seasoning
- β1 large Leekchopped
- β1 cup Cooked White Ricepreferably day-old rice
- β1 tbsp Coconut Oil
- β1 cup Black Beans, cookedcanned or cooked from scratch
- β1 cup Roasted Vegetables (such as sweet potatoes, carrots, and bell peppers)chopped
- β1/4 cup Cilantrochopped
- β2 tbsp Energizing Granola

Heat the coconut oil in a large skillet over medium-high heat.

Add the chopped leek and cook until softened, about 3-4 minutes.

Add the Jamaican Jerk Seasoning and cook for 1 minute, stirring constantly.

Add the cooked rice and stir to combine with the leek and jerk seasoning.

Add the cooked black beans, roasted vegetables, and chopped cilantro.

Stir to combine and cook for an additional 2-3 minutes.

Serve the rice mixture in a bowl and top with energizing granola.
