Stew
A hearty garlicky stew made with juicy beef and served over a bed of epic root vegetables.
Ingredients
- β500g beefcut into 2 inch cubes
- β2 onionchopped
- β4 cloves garlicminced
- β3 carrotspeeled and chopped
- β2 potatoespeeled and chopped
- β2 tbsp tomato pastedried
- β1 tsp monsoon spice blendto taste
- β1 cup stewcanned or homemade
Instructions

Heat oil in a large pot over medium-high heat.

Brown the beef cubes in batches until browned, about 5 minutes.

Remove the browned beef from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the chopped carrots and potatoes to the pot and cook for 5 minutes.

Add the browned beef back to the pot, along with the tomato paste and monsoon spice blend.

Stir to combine and bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours, or until the beef is tender.

Serve the stew hot, garnished with chopped fresh herbs if desired.
