Jamaican Jerk Pork with Gratin and Roasted Vegetables

Ingredients
- β1.5 lbs pork shoulderscored
- β2 tbsp Jamaican jerk seasoningavailable at most grocery stores
- β2 plum tomatoeshalved
- β1 cup gratinpre-made or homemade
- β1/4 cup epicchopped for garnish
- β2 tomatoesdiced
- β2 tbsp olive oilfor roasting
- β1 tsp saltfor seasoning
- β1 tsp pepperfor seasoning

Preheat oven to 400Β°F (200Β°C).

Season the pork shoulder with Jamaican jerk seasoning, salt, and pepper.

Heat olive oil in a skillet over medium-high heat and sear the pork shoulder until browned on both sides.

Transfer the pork to a baking dish and roast in the oven for 20 minutes.

While the pork is cooking, toss the plum tomatoes and diced tomatoes with olive oil, salt, and pepper on a baking sheet.

Roast the vegetables in the oven for 15-20 minutes, or until tender.

To make the gratin, combine pre-made or homemade gratin with chopped epic and a pinch of salt and pepper.
