Chicken Vindaloo
A popular Indian dish made with marinated chicken cooked in a spicy tomato-based sauce.
Ingredients
- β1 pound chicken breast
- β1 medium onion
- β3 cloves garlic
- β1-inch piece ginger
- β1 can (14 oz) tomatoes
- β2 tablespoons vindaloo paste
- β2 tablespoons lemon juice
- β2 tablespoons olive oil
- β1 teaspoon cayenne pepper
- β1 teaspoon salt
- β1/2 teaspoon black pepper
Instructions

Marinate the chicken in a mixture of lemon juice, cayenne pepper, salt, and black pepper for at least 30 minutes.

Heat oil in a pan over medium-high heat. Add the onion and cook until it's browned.

Add the garlic and ginger to the pan and cook for 1 minute.

Add the vindaloo paste to the pan and cook for 1 minute.

Add the tomatoes to the pan and cook for 5 minutes.

Add the marinated chicken to the pan and cook until it's browned and cooked through.

Serve the chicken with the sauce spooned over the top.

Garnish with fresh cilantro leaves, if desired.
