Russian Potato and Galette Casserole
A hearty, comforting dish featuring sliced potatoes, a crispy galette crust, and a hint of Russian flair.

Preheat oven to 400°F (200°C).

In a large bowl, combine the sliced potatoes and a pinch of salt.

Roll out the galette sheet to a thickness of about 1/8 inch (3 mm).

Transfer the potatoes to one half of the galette, leaving a 1-inch (2.5 cm) border around the edges.

Fold the other half of the galette over the potatoes, pressing the edges to seal.

Brush the top of the galette with a little bit of water and sprinkle with aerated pastry dough.
