Moroccan Sweet Potato Msemen
A delicious breakfast dish that combines the flavors of Morocco with the comfort of sweet potatoes. Perfect for a weekend brunch.
Ingredients
- β2 large sweet potatoes
- β4-6 pieces msemenstore-bought or homemade
- β1 package Moroccan flaky pastryoptional
- β2 tbsp olive oil
- βto taste salt
- βto taste black pepper
- β1 tsp cumin
- β1 tsp coriander
- β1/4 cup chopped fresh parsley

Preheat oven to 400Β°F (200Β°C).

Poke holes in the sweet potatoes and bake for 45-60 minutes, or until tender.

While the sweet potatoes are baking, heat the olive oil in a pan over medium heat.

Add the cumin and coriander and cook for 1 minute, stirring constantly.

Add the msemen to the pan and cook for 2-3 minutes on each side, or until crispy.

If using flaky pastry, roll it out and use it to wrap the msemen.

Once the sweet potatoes are done, slice them in half lengthwise and top with the msemen mixture.
