Thai Pad Crispy Exotic Stir Fry
A flavorful and spicy Thai-inspired stir fry featuring exotic mushrooms, crispy vegetables, and a hint of Thai aromatics.
Ingredients
- β1 cup exotic mushroomssliced
- β1/4 cup Thai basilchopped
- β1 cup crisp bell pepperssliced
- β1/2 cup pad thai noodlescooked
- β1/2 block tofucubed
- β2 tablespoons porcini mushroomsdried
- β2 tablespoons coconut oildivided
- β2 tablespoons soy sauce
- β1 tablespoon fish sauce
- β1 teaspoon sugar
- β1 teaspoon Thai red curry paste

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Add the cubed tofu and cook until golden brown, about 3-4 minutes. Remove from the skillet and set aside.

Add the remaining 1 tablespoon of coconut oil and swirl to coat the pan.

Add the sliced exotic mushrooms and cook until they release their liquid and start to brown, about 3-4 minutes.

Add the sliced bell peppers and cook until they start to soften, about 2-3 minutes.

Add the cooked pad thai noodles, soy sauce, fish sauce, sugar, and Thai red curry paste. Stir-fry for about 1 minute.

Add the cooked tofu, chopped Thai basil, and dried porcini mushrooms. Stir-fry for another minute.

Season with salt and pepper to taste.
