Seffa and Brussels Sprouts Tagine
A flavorful Moroccan-inspired stew featuring seffa, Brussels sprouts, and crunchy elements.
Ingredients
- β1 cup seffashort grain rice
- β1 pound Brussels sproutstrimmed and halved
- β2 teaspoons Moroccan spice blendcontaining cumin, coriander, and cinnamon
- β2 tablespoons olive oilfor cooking
- β1/4 cup crunchy almondschopped and toasted
- β1 medium onionchopped

Heat the olive oil in a large pan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the Brussels sprouts and cook until they start to brown, about 10 minutes.

Stir in the Moroccan spice blend and cook for 1 minute.

Add the seffa and 2 cups of water to the pan.

Bring to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.
