Egyptian-Style Lentil Curry
A flavorful and nutritious Indian-inspired curry made with red lentils, exotic spices, and served with warm flatbread. Perfect for a weeknight dinner.
Ingredients
- ●1 cup red lentilsrinsed and drained
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●1 tsp cumin powder
- ●1 tsp coriander powder
- ●1/2 tsp turmeric powder
- ●1/2 tsp garam masala powder
- ●1 tsp exotic spice blend
- ●1/2 tsp salt
- ●4-6 pieces flatbread

Heat oil in a large pan over medium heat.

Add onion and garlic and sauté until softened.

Add cumin, coriander, turmeric, and garam masala powders and sauté for 1 minute.

Add lentils, salt, and 2 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes.

Add exotic spice blend and stir well.

Serve hot with warm flatbread on the side.

To make flatbread, preheat a non-stick pan or griddle over medium heat.

Roll out flatbread dough into thin circles and cook for 1-2 minutes on each side.
