Syrian-Style Lamb Tagine
A rich and aromatic stew inspired by Syrian cuisine, made with tender lamb and exotic spices.
Ingredients
- β1.5 pounds Lamb shoulder
- β2 tablespoons Exotic spices (cumin, coriander, cinnamon)
- β1 teaspoon Syrian allspice
- β2 inches Gingerpeeled and sliced
- β3 cloves Garlicminced
- β2 tablespoons Olive oil
- β1/4 cup Chopped fresh parsley
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1 cup Dried apricots

Heat the oil in a large Dutch oven over medium-high heat.

Add the lamb and cook until browned on all sides, about 5 minutes.

Add the onion, ginger, and garlic and cook until the onion is translucent, about 5 minutes.

Add the cumin, coriander, cinnamon, allspice, salt, and pepper. Cook for 1 minute.

Add the apricots and 2 cups of water. Bring to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.

Skim off any excess fat and serve hot, garnished with parsley.

Serve with couscous or rice, if desired.
