Turkish Mushroom Menemen
A flavorful Turkish-inspired omelette dish filled with sautéed mushrooms, onions, and spices.
Ingredients

- ●1 cup Mushroomsliced
- ●2 tsp Turkish menemen spice mix
- ●2 tbsp Infused olive oil
- ●1/2 cup Onionchopped
- ●1/8 tsp Xanthan gum
- ●to taste Salt
- ●to taste Black pepper
Instructions

Heat infused olive oil in a large skillet over medium heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.

Add the Turkish menemen spice mix and cook for 1 minute.

In a separate bowl, whisk together the eggs and xanthan gum.

Pour the egg mixture over the mushroom mixture in the skillet.

Cook until the eggs are almost set, about 2-3 minutes.

Use a spatula to gently fold the omelette in half.
